6 medium boneless chicken breasts
1/2 cup grated Parmesan cheese
1 (1 1/2 oz.) Pkg. dry Ranch Dressing Mix
2/3 cup crushed corn flakes
1/2 cup shredded parmesan cheese
26 oz. jar marinara
2 eggs beaten
3/4 cup shredded Mozzarella cheese
In a small bowl, dip chicken in beaten egg. In a medium bowl, combine corn flakes, 1/2 cup grated Parm. cheese, and ranch dressing mix. Coat all of chicken with corn flake mixture. Place on a cookie sheet that has been sprayed with a non-stick cooking spray. Bake at 350' fot 30-35 minutes or until chicken is thoroughly cooked. Then ladle 1/2 cup marinara sauce over each piece of chicken, then sprinkle with the rest of cheeses and return to oven just long enough to melt cheese.
( I like to either pound my chicken breast out thin or butterfly them. Then it is good served with your favorite pasta and salad)
Sweet and Sour Meatballs
( This is a recipe that I just have started to make recently, but I don't think my kids will ever let me go back to my moms meatball recipe. They love these, if they are picking dinner I know this is what they are going to request. This recipe is so simple and fast, so I guess I won't complain. They are pretty basic meatballs but the sauce makes them yummy!)
Meatballs:
1 lb. ground beef 1 tsp. salt
3/4 cup oatmeal 1/2 tsp. pepper
2 eggs, beaten 1 tsp. worcestershire sauce
1/2 cup milk
Sauce:
1 cup brown sugar 1/2 cup BBQ sauce ( I like Sweet Baby Rays)
1/2 cup vinegar 2 tsp. Worcestershire sauce
2 tsp. mustard.
In a large bowl, mix groud beef, oatmeal, eggs, milk, salt, pepper, and 1 tsp. worch. sauce. Knead well with hands, then form golf ball sized balls with your hands and place on a 9x13 inch baking dish. Make sauce by mixing in a bowl the brown sugar, vinegar, mustard, BBQ sauce, and 2 tsp. worch. sauce. Pour over meatballs and bake at 350' for 15 minutes then roll them and bake an additional 15 mins. Serve over rice and enjoy!
Shoepeg Corn Dip
( This is a good dip to make when you are having a BBQ with friends, it make quite a bit)
2 cans shoepeg corn, drained
2 cans chopped olives ( I like to use sliced better)
1 bunch green onions
1 green pepper, diced
6-10 roma tomatoes diced (just depends how much you like tomatoes)
1 can diced green chilies
2 avocados diced
1 Tb. vinegar
8 oz., zesty italian dressing
Mix all ingredients together and Chill for at least 2 hours , serve with Frito scoops or tortilla chips
( For a variation you can use black beans instead of the avocado)
Best Ever Bread Sticks
(That is the name of them in the Star Valley book I found them in, but I do agree they are very yummy with any pasta or even pizza and very easy which is always a plus)
1 Tb. yeast 1/2 cube butter
1 1/2 cup warm water garlic salt
2 Tb. sugar Parmesan cheese
2 1/2 to 3 cups flour
1/2 tsp.salt
Combine first 3 ingredients (yeast through sugar) and let set until yeast works. Add 2 1/2 to 3 cups flour, and 1/2 tsp. salt. DON"T add all of the flour until you see if it is needed. Knead 3 minutes and let rest for 10 minutes. Put butter on a sheet cake size cookie sheet and let it melt in the oven. Roll out dough on floured board and cut into strips. Coat each strip in the melted butter and place on pan. Sprinkle with garlic salt and Parmesan cheese if desired. Bake for 20 minutes at 375' Can dip hot bread sticks in Spaghetti sauce or what ever dip you desire.
(Another thing you can do is dip roll in cinnamon and sugar instead of garlic salt and cheese.)
Fruit Salsa and Cinnamon Chips
2 kiwis peeled and diced
2 apples peeled and diced
1 lb. fresh strawberries diced
1 8oz. pkg frozen raspberries thawed
2 Tbsp. granulated sugar
1 Tb. brown sugar
3 Tb. fruit preserves (any flavor)
In a large bowl, mix all fruit an sugars. Cover and chill for at least 20 minutes.
( It can be expensive if you have to buy frozen raspberries so I have just added a little extra strawberries and used raspberry freezer jar as my preserve. This stuff is really good and you can do alot of things with it. Use it as a crepe topping or even instead of cutting your tortillas into chips fry then like tacos and have a "fruit taco topped with a little whip cream")
Cinnamon Chips
10 10-inch flour tortillas
vegetable oil for frying
2 cups cinnamon-sugar mixture to taste
Cowboy Potatoes
( One of the best restaurants in Texas is Perini's Steakhouse. This recipe is out of their recipe book and they are simple and go with any meat dish.)
4-5 pounds red potatoes cut into wedges (small ones just cut in half)
1 stick of butter, melted
1 medium white onion, sliced
1-2 cloves garlic, minced
1 tsp. salt
1 tsp. black pepper
1/2 tsp. oregano
Preheat oven to 350'. Coat the potatoes in butter, toss with onion and garlic then sprinkle with salt and pepper and oregano. Place in a baking dish, cover with aluminum foil and bake for 1 hour. (stirring occasionally) After 1 hour remove foil and continue cooking for another 30 minutes to achieve a nice golden brown. (serves 8-10, I usually cut it in half)
Just in case you want a good steak to go with your potatoes!
Perini Ranch Steak Rub
1 Tb. corn starch
2 TB. salt
4 tsp. coarse ground black pepper
1 tsp. dried oregano
4 tsp. garlic powder
1 tsp. paprika
1 tsp. granulated beef stock base
Mix all ingredients together and either sprinkle or rub into the meat. (brisket or steak)
Makes 1/2 cup
Cut tortillas into strips or triangles. Heat oil in frying pan. Drop tortilla strips into hot oil a few at a time. When golden brown, remove and immediately drop into cinnamon- sugar mixture. Coat chips with mixture then place on paper towels. Allow chips to cool. Serve with fruit salsa.
Chocolate Chip Oatmeal Brownies
1 cup sugar 1 tsp. cinnamon
2/3 cup sugar 1/2 tsp. salt
2/3 cup brown sugar 1/4 tsp. nutmeg
2 eggs 2 cups uncooked quick oatmeal
1 tsp. vanilla 1 pkg. chocolate chips
1 tsp. baking powder
Beat until light and fluffy, gradually beat in sugars, mix eggs and vanilla. Stir in flour, baking powder, cinnamon, salt, and nutmeg. Stir in oats and half of the chips. Spread in greased 9x13 pan sprinkle rest of chips on top, Bake 350' 20 minutes or until lightly brown.
( I like to make these on Sunday afternoon when I want something sweet but I don't want to spend so much time baking all the batches of cookies. I also like to use half milk chocolate chips and half white chocolate chips)
